A Peanut Butter Variation of Nanaimo Bars

Peanut Butter Nanaimo BarsWhen I went searching on Google for images of Nanaimo Bars to help explain what they are to a friend of mine who didn’t know what they were, I came across a site that had some interesting suggestions for variations for making different kinds of Nanaimo Bars. I was most intrigued by the Peanut Butter Nanaimo Bars variation and thought the next time I made some, I would give that a try. And of course, I would make my variation completely sugar-free so that it can be compliant with Jorge Cruise’s Belly Fat Cure program that I have been following.

The main changes to the basic Nanaimo Bar recipe is that I would replace the walnuts with peanuts and leave out the coconut out of the base layer. In the custard layer I would reduce the amount of butter used and replace it with peanut butter. In this case, I used Joseph’s Sugar Free Crunchy Peanut Butter, and the top layer would remain the same. So not too much different to try the variation. Fortunately I had some raw peanuts to use, and the sugar free peanut butter on hand to make it.

Coca-Cola Freestyle Fountain – The Future Of Soda Fountains

Coke Freestyle FountainThe future of Soda Fountain dispensing has arrived, at least in beta testing form. When I stopped at the San Marcos, California location of Noodles & Company to redeem the free bowl of pasta offer I received for my birthday from the chain, I discovered they have installed a new soda fountain machine which according the signs offers over 100 different flavor combinations. Amazingly the machine didn’t seem to be much any bigger space wise than a traditional fountain machine except for the fact it was freestanding instead of having to be mounted on a counter. The opening within which to place the cup seemed to be styled from the “Men In Black” school of retro looking futuristic designs.

Instead of offering individual taps for each of the 100+ flavors, there was just a single opening in the Coca-Cola Freestyle Fountain. You just insert the cup against the lever in the back to have ice drop through the machine into your cup, then just allow the cup to sit in the center while using the touchscreen to pick the brand of beverage to bring up a sub menu of available flavors from which you can choose to fill the cup with. Many of the flavor choices are ones that aren’t available in retail stores as bottled choices because there simply is no way any store would ever carry that many different flavors.

The Almost Sugar Free Black Forest Cake

Black Forest Cake - Top ViewAs I’ve started to become proficient in making sugar-free alternatives for desserts that are compliant with Jorge Cruise’s Belly Fat Cure program, one of the challenges I’ve had in mind that I wanted to attempt for myself was to make an as close to sugar-free as possible Black Forest cake for my birthday. Not any of the fancy Black Forest cakes made with Cherry liquor or several fancy layers as those to me aren’t Black Forest cakes to me. For me, I tend to like the plain ol’ neighborhood supermarket variety of Black Forest cakes.

The reason I love these kinds of Black Forest cake is because it was always something special my grandmother would get from her local SuperValu Grocery store back in Calgary, Canada when I was a kid. She would do this especially for me when I would come to stay with her or at least that’s what she would tell me. Its not so much that the cake was anything special in itself, just the memories of time with my grandmother where she would make me feel like I was the most important person in the world and we were getting to enjoy a special treat together. I miss my grandmother since she passed away at the end of 2001, so I generally like to celebrate my birthdays with a Black Forest cake to not only celebrate my birthday but to feel like I’m still having a special moment with my grandmother.

Sugar Free Nanaimo Bars – The Second Batch

Nanaimo Bars PanAfter the successful attempt last week of making Sugar Free version of the Canadian dessert, Nanaimo Bars, I decided to make a second batch and this time allowing the custard layer to firm up before adding the top chocolate layer. And by placing the pan in the freezer after adding the custard layer and taking a few minutes to clean up the kitchen some and them making the top chocolate layer worked wonders this time in getting the right level of separation of the layers in the finished dessert. The chocolate layer was easy to spread on top of the custard without it mixing in.

As seen in the photo above, I don’t have an 8×8 square cake pan, so I have been using a 9 inch round cake pan instead. I think this causes the custard layer to not be quite as thick as it would have in the slightly smaller pan, but still works great. I’m still really pleased with the results of this dessert and it’s been a very delicious treat. I need to whip up another batch and take a pan into Jorge Cruise’s office so I can introduce him to another incredible dessert that works well with his Belly Fat Cure program.

A New T-Shirt Thanks To The Zevia

Zevia ShirtI just got in the mail a brand new t-shirt from the makers of Zevia. Zevia is the amazing sugar-free, calorie free, soda that’s made with all natural ingredients that I have been enjoying on the Jorge Cruise’s Belly Fat Cure program. For a lack of a better term, I’ve been nothing but a cheerleader for Zevia since trying the brand. With the amazing flavors and all natural ingredients, it’s been very easy to kick the habit of diet sodas loaded with Aspartame. Zevia gets its sweetness from Stevia, a natural herb from South America.

If you haven’t tried Zevia yet, you really ought to give them a try. Making Sugar-Free Nanaimo Bars

Sugar-Free Nanimo BarsOne of the biggest challenges on Jorge Cruise’s Belly Fat Cure program is not the cutting actual meals down to no more than five grams of sugar and two carb servings per meal. In fact, that’s been fairly easy and very easy to do with store bought meals or even restaurant food for those of us like me who are not cooks. However, as someone who’s always had a bit of a sweet tooth, I get a craving for desserts, and that’s where the problem comes in. Ready made or store bought sugar free desserts that aren’t made with those toxic artificial sweeteners are near impossible to find.

In the 17 weeks I’ve been on the Belly Fat Cure program I have lost 54 pounds thus far and a large part of my continued success has been learning how to make sugar free desserts. I’ve have made sugar free Brownies, sugar free chocolate chip cookies, and even some homemade sugar free ice cream in a variety of interesting home made flavors. And while the sugar free chocolate chip cookies have been some of my favorite of the desserts I’ve made, it was time for a more ambitious project.

Sometimes You Just Have To Get Imported Ingredients

Birds Custard PowderOn my last visit to my mom’s house, I presented her with a couple of Eat-More candy bars from GoCanuck.com that I had ordered for her. The candy bars sparked a discussion of some of the things from Canada we miss, and as we reminisced, my mom mentioned, Nanimo Bars. Nanimo Bars are a layered dessert cake that feature a base layer, a layer of custard, topped with a layer of chocolate. The legend has it that the dessert was created by a housewife from Nanimo, British Columbia who decided to name it after the town. How true that is or not, I don’t know, but in any case, it’s kind of a well known dessert in Western Canada.

Well my mom, pulled out her recipe book from Canada from which she used to make the recipe and I decided to make a photo copy of it and thought I would see if I could make a sugar-free version of it to be complaint with Jorge Cruise’s Belly Fat Cure program. And it presented some interesting challenges. A couple of the ingredients were going to present a challenge, but I was up for the challenge.

A Failed Batch Of Cookies Made From Shreddies

Failed CookiesAs many know, I’ve been making my own cookies in compliance with the Belly Fat Cure program by Jorge Cruise. And today I attempted another batch, but this time I was getting a little creative with the recipe. And unfortunately, this time the cookies ended up being a failure of mass proportions. But a very delicious failure to say the least.

This time I decided I wanted to try and mix in some of the Shreddies, I had gotten in my order from GoCanuck.com. Shreddies is a popular breakfast cereal made by Post in Canada. Since their sugar content is a little over what I’m technically allowed on the Belly Fat Cure program, I thought I’d try and find some additional uses for the cereal that would allow me to enjoy them but with fewer of them in a serving so that I can keep the cereal compliant with the program. So as I pulled out all my supplies for making cookies, I thought, maybe I should try using the cereal instead of the Soy flour I had and so I smashed up about 2 cups worth of Shreddies to replace the 2 cups of of flour called for in the recipe.

And then I also chopped up some Macadamia nuts and threw in a bag of the Hershey’s Sugar Free Chocolate chips, and for good measure, added a bit of cinnamon to the mix. And of course I was using Xylitol and a little bit of Sugar Free Maple Syrup to sweeten the mixture so that the only sugar in the dough was what was already inside the Shreddies cereal. Well when all the ingredients were added together, the dough was very much like the regular dough from when I’ve made cookies before. It was thick so I spooned it all out on the cookie sheets and threw the cookies in the oven to bake.

Lose Weight By Eating Cookies? Yes, It’s Possible

Smart For Live Cookie MonsterAs someone who works in the middle of the night and am subjected to whatever is on the televisions in the breakroom at work, I am often subject to some of the more annoying commercials and informercials that plague the television landscape during those late night hours. One of the most annoying commercials as of late is for the “Smart For Life” diet program where all the people in the commercial proclaim according to the old children’s song that they have stolen a cookie from the cookie jar and have lost a lot of weight in the process. Which of course begs the question, is it really possible to eat cookies and lose weight?

The answer is definitely yes, as I have been doing exactly that, but NOT with the Smart For Life program. The commercials alone as annoying as they are have pretty much guaranteed I’ll never try the product. Upon further inspection of the program it seems that you are supposed to eat six of these cookies as meal replacements during the day and have a meal with a lot of protein and about 5 cups worth of vegetables. Not quite sure how well the program works for maintaining your weight once you reach your goal weight and come off the cookies, since programs with special food are inherently flawed by the fact you eventually come off the program and have to replace the special foods. But it does seem the testimonial cases in the commercial have done well with the program.

Zevia & Clemmy’s Makes Amazing Sugar Free Ice Cream Floats

Orange Zevia FloatHave made some awesome Sugar Free Chocolate Milkshakes the other day (click here to read about it), I was curious of other ways to experiment with the sugar free ice cream. And since it’s summer here in the Northern Hemisphere, a great summer treat is a float. But traditional floats can be loaded with sugar between the ice cream and then when you add on top of a soda, you’re just asking for sugar overload.

Well since I have some Clemmy’s Sugar Free Ice Cream on hand in the incredibly awesome Vanilla Bean flavor, it’s perfect for mixing into a float. And since I’m also a big fan of Zevia‘s Natural Diet Soda in all it’s flavors (Cola, Twist, Root Beer, Orange, Black Cherry, and Ginger Ale) I’ve got plenty of opportunities to try the various combinations. I was certainly leaning towards the Root Beer and Cola flavors as most people usually do A&W Root Beer Floats or Coca-Cola floats, but I ultimately decided I wanted to try an Orange Float in the hopes it would taste a bit more like an old fashioned Creamsicle. I was not disappointed.

Zevia‘s Orange soda perfectly compliments Clemmy’s Sugar Free Vanilla Bean Ice Cream. The treat was completely sugar free and the ice cream does add a couple of servings of carbohydrates, but nothing out of the ordinary. This is a perfectly delicious treat to try if you’re on Jorge Cruise’s Belly Fat Cure Program. It comes out absolutely delicious. It tastes just like a Creamsicle and isn’t going to blow your diet since there’s no sugar at all in the treat.
